There was one true documentary produced in 1981 for PBS called "Making M*A*S*H." You can read all about it here.

There's also the BIOGRAPHY episode "M*A*S*H: Television's Serious Sitcom," which was included as a special feature on the Martinis and Medicine DVD set (as well as the Goodbye, Farewell, and Amen DVD release).

Memories of mash and the 30th reunion both avalable on dvd altho not documentries they do give a behind the scene look. They might help

Altho memories of mash seems to be edited to what iriginaly aired. Not a lot but this was edited.
